"In my mind there’s nothing more comforting than a satisfying bowl of sweet porridge, buoyed up with aromatic winter spices. Dress it with indulgent layers of your favourite toppings but don’t relegate it merely to breakfast; it’s versatile enough to be enjoyed throughout the day.
From caramelised pear to coconut flakes, pecan nuts to pumpkin seeds, figs to flaked almonds. Here I’ve added chia seeds for an extra nutritional punch."
Spiced Vanilla, Chia & Date Porridge
I N G R E D I E N T S
1 mug organic rolled oats
3 mugs milk of your choice (I use unsweetened almond)
1 tablespoon chia seeds
2 fresh dates, finely chopped
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla bean paste
M E T H O D
Put everything into a pan and gently bring to the boil. As soon as the mix starts to bubble, turn down to a low heat and stir constantly until it becomes luxuriously creamy.
Spoon into bowls and top with whatever you have to hand - granola and seeds for a bit of crunch, berries for tart fruitiness and nut butter or coconut yogurt for texture!
