“My dream at first was for a small place which I could have called “home sweet home” with room to grow vegetables for my kitchen and guest bedrooms for my friends and guests," says Raymond. "But life is not like that, one doesn’t control one’s destiny. I found this beautiful grand house and after over 30 years, I am still completely in love with it.”
His infectious, laid-back attitude shines through, not only in the distinctive design of the hotel's 32 bedrooms, each one based on a vision dreamt up by the chef himself, but also the Raymond Blanc cookery school, laid out like an extended home kitchen. During the autumn months, the hotel is (arguably) at its best - as the leaves turn to vibrant red and orange it's hard to beat a stroll through the enchanting gardens and orchards.

For those looking to brush up on their culinary skills (or total lack thereof), the acclaimed Raymond Blanc Cookery School delivers a relaxed setting to roll up your sleeves and learn new tricks under the eye of an expert. The school offers courses for all abilities (with ingredients measured out for you in advance there is little room for error!), and there are plenty to choose from.
Our favourites include the 'Chocolate Heaven' course, where guests are invited to indulge their inner chocoholic, or the new ‘Autumn Dinner Party’ course – which teaches the secrets to creating simple, seasonal dishes from scratch that are sure to impress friends and family. Much like the rest of the hotel, the pace here is relaxed and the charm levels high - much like Raymond, Head Tutor Mark Peregrine brings over 30 years' experience to the role but is instantly welcoming, funny and down to earth.
